2007 Inter-College Competition

The 2007 Norwegian Seafood Inter-College Competition took place at the Restaurant Show in October, where seven teams representing catering colleges across the country were given one hour to prepare their chosen two courses using Norwegian cod and cold-water prawns.

The chef duo from Thames Valley University (TVU), Davide Machado and Lydia Chaplin, were announced as the champions, with Westminster Kingsway students Ben Arnold and Nash Deregnieux coming a very close second.

According to judge John Retallick, “it was extremely close to call”, however the young chefs from TVU nudged ahead with their duo of Norwegian cold water prawns followed by fillet of Norwegian cod with a parmesan and herb crust and portobello mushroom ravioli. “They worked well together as a team and their choice of ingredients and balance in their dishes finally tipped the scales for them,” adds Retallick.
