2007 Senior Recipe Challenge

Twenty-seven year old Simon Webb, head chef at Barclays Wealth for Restaurant Associates, was awarded first place in the 2007 Norwegian Seafood Recipe Challenge, which took place at the Restaurant Show in October.

Webb battled it out against seven other professional chefs at the final, preparing his winning dish of slow cooked halibut, Atlantic prawns and baby squid, organic chorizo, with white almond risotto and onion veal jus, which the judges said was “the clear winner” with “great textures and flavours'.

Second and third place went to Kevin Sutherland, sous chef at The Balmoral Hotel, Edinburgh and Sean McNulty, chef lecturer at Radbrook College, Shrewsbury respectively.
