Alaska Seafood Challenge

An exciting competition from new business partner Alaska Seafood is a challenge that all professional chefs are being invited to take up.
Alaska Seafood is asking for recipes for a main course featuring either Alaska salmon, black cod or pollock that are "contemporary, original, simple and creative and that bring out the succulent natural textures and flavours of Alaska Seafood".
It says the main emphasis for judging will be on the taste of the finished dish.
Recipes should be typed and produced for four covers with a clear method of no more than 10 stages with a colour photograph of the dish plated, and from those submitted three finalists will be chosen and invited to present their dishes at M & J Seafood's innovation centre in Covent Garden in London on February 15 2010, where a panel of distinguished judges will choose the winner.
Competitors will have to cook their dish from scratch in front of these judges and will also have to bear in mind that the winning recipe has to be a good profit maker.
First prize will be a day's work experience in a top restaurant kitchen, a trophy and a set of knives and runners up will be awarded M&J Seafood vouchers.
• Closing date for entries is January 22 2010. Finalists will be notified on or around January 29 2010. Further entry forms, information and a list of Alaska Seafood distributors in your area can be obtained by calling Alaska Seafood on 0208 607 0349. Click below to download an competition entry form.
