Canteen chef flies high with British Airways

Cass Titcombe, chef and co-founder of London restaurant Canteen, has teamed up with British Airways as part of its Taste Team.

Titcombe, known for his modern British menu, joins a host of top culinary experts offering the best possible food for customers.

"What BA offers is very good and they have a brilliant team and it's an honour to be part of that", said Titcombe.

The professional cook is the first Taste Team chef to take on a 'seasonal assignment', to create a dish for a single season over the coming year.

He added: "It's going to be very exciting. I have been asked for four dishes for the summer season and I'm working through the menus now."

Inflight catering has come a long way in recent years, said Titcombe. "Airline food always seemed to have the same reputation that British food had some time ago. But, BA wants to take a different approach and be more seasonal which is really good."

Titcombe's latest restaurant opened on London's Baker Street just six weeks ago. He commented on what he hopes to achieve at his new venture: "I'll be taking a simple approach – using high quality ingredients for dishes that are reasonably simple in preparation."

"Slow-cooked dishes, popular in his restaurants, are likely to make an appearance, as they are practical for inflight catering."

The London chef, who is already working on his next restaurant opening at Canary Wharf later this year, said he believed the quality of airline food can influence people's choices on which airline they fly with. He said: "If the food is good people will notice and it is bound to be a part of why people fly with an airline. It's really about the overall experience."

Other members of the BA Taste Team include Michel Roux, Liam Tomlin, Shaun Hill and Vineet Bhatia.
