Chef Cyrus Todiwala launches new range of fresh cooking sauces

Cyrus Todiwala, chef patron of Cafe Spice Namaste, has launched a new range of fresh, chilled cooking sauces under the Mr Todiwala's brand.

The sauces, which are available in 350g pouches, come in five different varieties, and are kitchen-made at his landmark Indian restaurant a stone's throw from the Tower of London.

None of the sauces contain artificial flavourings or colourings and are suitable for home freezing. They can be used to cook vegetables, fish, beef, lamb or chicken, and are also ideal for vegetarians and coeliacs.

Cyrus Todiwala said: "For years, visitors to Café Spice Namaste had been asking me and my wife and business partner Pervin to create a range of authentic cooking sauces that they could use to cook at home. I guess they wanted a little bit of Café Spice Namaste in their own kitchens, but with the convenience demanded by their busy lives. In a way, this is for them!"

The five varieties of cooking sauce are:

Mr Todiwala's Makhani – a hint of green chilli and fresh ginger adds pep to this lush and creamy sauce – perfect for making an authentic North Indian Chicken Makhani dish

Mr Todiwala's Bhuna – slowly cooked minced onions, tomatoes and roasted spices finished by blending pureed caramelised onions and yoghurt to a rich texture – perfect for making an authentic Chicken Bhuna

Mr Todiwala's Dhaansaak Daal – a pot-pourri of lentils and vegetables and pureed, traditionally finished lamb, perfect for making an authentic Lamb Dhaansaak

Mr Todiwala's Vindaloo –of Portuguese origin, the sauce as Cyrus know it in Goa, not fiery hot but by no means mild - perfect for making authentic Goan Vindaloo.

Mr Todiwala's Chettinad – a hot and zingy sauce from the Madras region's original devilled sauce recipe – perfect for making an authentic Chicken Chettinad

Mr Todiwala's Splendidly Flavoursome Indian Sauces are now available at Selfridges Food Halls in Oxford Street and at the Real Food Festival at Borough Market.

They will also be available at the Real Food Show at Earls Court from 7-10 May 2010.
