Simon Hulstone, Knorr National Chef of the Year 2008/09 and chef proprietor of the Elephant Restaurant in Torquay, has once again been chosen to represent Britain in the Bocuse d'Or culinary challenge.

Hulstone was selected by the Academy of Culinary Arts following his performance in the recent Master of Culinary Arts final.

His preparation begins this month when he visits six of Denmark's top restaurants including Noma and Solerod Kro.  In January 2010, Hulstone will be working in some of Paris' most prestigious restaurants as part of his training. He will also be supported by the Academy of Culinary Arts and a team including president, Brian J. Turner CBE and John Williams MBE, executive chef, The Ritz London.

Hulstone previously represented Britain in the Bocuse d'Or finals in Lyon in January 2009. He  said: "Having competed in the 2009 finals, I know what it takes to get into the top five and this time I'm hoping to have the time and resources I need to do this.

"My role is not just about competing but raising the bar for future British entries, if the industry gives us the right backing now then there's no reason why we can't give the Bocuse d'Or the exposure it deserves and even bring the title home."
