Young chefs set to shadow Sussex chef

Between Monday 21st September to Thursday 24th September, Matt Gillan, head chef at The Pass restaurant at South Lodge Hotel in Horsham, has invited some of England’s top young chefs to guest chef over the course of the week.

South Lodge is situated in the heart of the Sussex Downs and The Pass, which opened in November 2008, was created as part of an £8 million investment programme.

Gillan, formerly of Gordon Ramsay in London and Midsummer House Restaurant in Cambridge, has specifically selected young, up-and-coming chefs from restaurants outside London.

Throughout the week each chef will create a six-course tasting menu and diners will have the opportunity to watch all the chefs in action throughout service in the 22-cover restaurant, situated in the heart of the kitchen. LCD screens will also display the chefs cooking in the kitchen.

On Monday Jonray and Peter Sanchez Iglesias of Casamia restaurant in Bristol will be showcasing their inspired Italian cuisine. Casamia was awarded its first Michelin star in January 2009.

Tuesday will be James Graham from Allium in Gloucestershire which won South West Restaurant of the Year in the 2008 Good Food Guide.

Wednesday night welcomes Michael Bremnar of Due South in Brighton which sources 80% of the restaurant's ingredients from within a 30 mile radius of the restaurant, allowing them to support local farmers and suppliers.

On Thursday, Gillan himself will be creating dishes such as 'ballotine of red mullet, pak choi, cannelloni of razor clams, crushed peas and slow cooked belly of pork, roasted peaches, white beans, spice sauce'.
