Alaska Seafood Challenge

Alaska Seafood and the Craft Guild of Chefs are looking for contemporary main course recipes featuring either Alaska Salmon, Black Cod or Pollock

Alaska seafood is wild, natural and sustainable. Since 1959, Alaska’s constitution has mandated that its seafood should be maintained sustainably - this means Alaska seafood will be preserved for future generations.

The Alaska Seafood Recipe Challenge is open to all professional chefs. From recipes submitted, 3 finalists will be chosen and then invited to present their dishes at the prestigious M & J Seafood’s test kitchens in the heart of London’s Covent Garden on Monday 15th February 2010, where a panel of distinguished judges will choose the Winner.

Recipes should be for a main course featuring either Alaska Salmon, Black Cod or Pollock. The judges will be looking for recipes that are contemporary, original, simple and creative and that bring out the succulent natural textures and flavours of Alaska Seafood. The main emphasis for judging will be on the taste of the finished dish. Competitors will be expected to cook their dish from scratch in front of the judges. Recipes should be typed, and produced for four covers with a clear method of no more than 10 stages with a colour photograph of the dish plated. Competitors should also bear in mind that the winning recipe will be a good profit-maker.

PRIZES


The first prize-winner will receive a trophy, a set of knives and a day’s work experience in a top restaurant kitchen.

Prizes of M&J Seafood vouchers will be awarded to 2nd and 3rd place winners.

The closing date for entries is Friday 22nd January 2010. Finalists will be notified on or around Friday 29th January 2010.
