Game on

Jose L Souto, chef lecturer and game expert, will be hosting a seminar and master class at Westminster Kingsway College which will cover everything from species of deer, to a butchery demonstration on hares and rabbits.

The events, taking place on the 24 November and 24 January 2009, will begin at 10.00am titled "Game lecture part 1 feathered and small furred game" and will be looking at the game birds found in the UK, focusing on their seasons, best time to eat and preparation.

 

This session will also cover hares and rabbits along with a butchery demo on preparing whole carcases and then focusing on individual cooking joints. This workshop will follow by lunch in the Vincent room restaurant at 12am with game dishes on the menu.

 

Kicking off at 1.30pm will be the "Game lecture part 11 venison", which will run through all six species of deer found in the UK, looking at the seasons for each species, the difference in their meat and appearance. This lecture will also cover a demo on skinning a carcase and breaking it down to its major joints.

 

Both sessions, costing £60 per person which includes the lecture, lunch and a colour copy of a booklet focusing on Game preparation and identification, will finish up at 3.30pm.
