Serves 4
- 100g Bernard Matthews British turkey roast chunks
- 60ml Greek/plain yogurt
- 25g Uncle Ben’s Sweet & Sour Sauce
- Child’s handful of fresh mint, chopped
- ¼ fresh mango or tinned drained pineapple (1 ring)
- ¼ cucumber (de-seeded and diced)
- 1 spring onion (chopped)
- 1 little gem lettuce
Preparation method
1. Dice or shred the cooked chicken.
2. In a bowl mix together the yogurt, Uncle Ben’s Sweet & Sour Sauce and fresh mint.
3. Into your yogurt mix fold in the chicken, fruit, cucumber and spring onion.
4. To serve - pile the mixture on top of the lettuce leaves and sprinkle mint on top.
