Chef Dev Biswal launches his own brand of premier marinades
Dev Biswal, the chef-patron of The Ambrette Michelin-listed fine Indian dining restaurant in Margate, has launched his own brand 'Biswal's Premier' marinades.
The 'Premier Marinade for Lamb' product contains a "unique blend" of ingredients including mustard oil, ginger, garlic, pickle, salt, garam masala, red chilli and turmeric and the 'Premier Marinade for Chicken' offers a blend of fresh coriander, fresh mint, fresh ginger, fresh garlic, mustard oil and green chilli. Meanwhile the 'Premier Marinade for Fish' can be used for white varieties or oily species such as mackerel or salmon and comprises a secret recipe of mustard oil, turmeric, coriander seeds, onion seeds, fennel seeds, carom seeds fenugreek, lemon juice, salt, sugar, black pepper, asafoetida and curry leaves.
The marinades were trialled at the recent Broadstairs Food Festival, where Biswal gave masterclass cookery demonstrations.
Biswal said: "My vision is to bring cultures together by introducing new food habits. I believe food like art and music is a major catalyst in improving relationships amongst people across borders.
"Artists and musicians are worshipped as cultural brand ambassadors, whereas chefs are not."
