The Swan creates theatre window for diners
In a move to bring its customers one step closer to the preparation and cooking of the seasonal and regional menu at the Michelin-listed brasserie The Swan, in West Malling, owners Peter Cornwell and Diccon Wright have created a giant theatre window at the restaurant.
Diners will now be able to watch the award-winning head chef, Scott Goss, in action with his team of chefs, as they prepare the regional and seasonal European menu with a British twist that has attracted a regular customer base from all over the South East of England. The theatre window offers customers a glimpse of the oldest part of the 15th century building, from the contrasting contemporary restaurant interior, whilst diners sitting with their back to the kitchen are also be able to enjoy the action via a magnificent mirror which cleverly creates a double sense of drama. The Swan has even made sure that private diners on the second and third floors of building are connected with the cooking, with plasma screens directly linking corporate and private diners with the action in the kitchen. As Pete Cornwell, managing director at The Swan said: "Following Scott Goss's recent industry award, we felt it was important for all the talent and creativity in the heart of the business to be on view to the general public. Customers really enjoy the contrast of the relaxed vibe in the restaurant and the frenetic pace in the kitchen and the contemporary interior of the restaurant looking through to the 15th century part of the building. It's created a wonderful connection between the food preparation, cooking and dining at The Swan." The theatre window is part of a general interior upgrade on the ground floor at The Swan, which includes a specially designed feather wallpaper to highlight the link with the regal bird the business is named after. The fluid and subtle feather motif is echoed on the walls and menus in the restaurant and the upgrade includes luxurious new soft furnishings, a contemporary chandelier and trendy slate menu boards, all of which were designed by London designers Brinkworth Design, who created the award winning interior for the Swan At The Globe, at The Globe Theatre.
