Persimon, blueberry and pomegranate salad

Spanish Persimon recipe courtesy of Foods from Spain

  • 1 Spanish Persimon, thinly sliced
  • 50g Blueberries
  • 50g pomegranate seeds
  • Small bunch of fresh mint, roughly chopped
  • Honey to serve
  • Yoghurt to serve (optional)
Preparation method

1. Layer the slices of persimon, pomegranate and
blueberries in a small bowl
2. Drizzle with honey and finish with a sprinkle of fresh
mint
3. Serve with a dollop of yoghurt (optional)
